The second goal for this month is a little more involved than Goal #1. But I think canning is so important that I emphasize it every year. Other goals may change from year to year, but this is one I will always include.
I believe canning is one of the Top 10 Skills for Self-Reliance. It captures your summer bounty and ensures that your family will always have healthy and tasty food. If you know how to can, you will be able to make good use of all the abundance this season offers.
Canning is easy! With a little practice you will find it just takes one or two hours to produce a batch of jars filled with garden goodness. Pace yourself and can just a littlebit each day. That way it will not become an overwhelming or time-consuming chore.
If you’ve never canned before, here is a website that explains all the basics. I really like this website (I even have a link to it on the side, that’s how important it is.) because it starts with the most basic information, stuff that I need to remind myself of every year. It has all the important safety rules of food preservation.

There is just something deeply satisfying about walking into a pantry filled with jars of your garden goodness, all bottled up and ready to enjoy in the cold winter months to come. I hope you’ll make it a standard practice every year.
