If you want to send your kids off to school with a tasty, filling hot breakfast, this is just the ticket. Just mix this up before going to bed, put it into the crock pot and wake up to a tasty,
healthy, hot ready-made breakfast.
2 1⁄4 C old fashioned oats (not quick or
1 1⁄2 C shredded carrots
1 C pineapple, crushed or tidbits
1⁄2 C raisins
1⁄2 C pecans or walnuts (optional)
3 C milk (any kind: instant, almond, soy or regular dairy milk)
1⁄2 C brown sugar
11⁄2 tsp cinnamon
1⁄2 tsp ginger
1⁄2 tsp cloves
1 tsp vanilla
1⁄4 tsp salt
Mix oats, carrots, pineapple, raisins and nuts together in a 1 1⁄2 – 2 qt slow cooker dish. Whisk sugar, milk, salt and spices together until sugar is dissolved. Pour mixture
over oatmeal mixture and stir until everything is evenly mixed.
Cover and cook on low heat overnight, 6-8 hours.
