Last year I told you about how I preserved 5 lbs of lemons in salt. This was a new experiment for me and I wasn’t sure how it would turn out. Well, I’m happy to say, it was all I hoped for. Today, one year after putting the lemons in a jar with salt, I used the last of them for Chicken Tagine. It was extraordinarily tasty.
So this month I have two recipes for you: Preserved Lemons and, so you can get started using your tasty lemons, a recipe for Chicken Tagine. But Chicken Tagine is just the beginning. You can use preserved lemons in just about any savory lemon recipeyou like. Try one of these recipes or adapt on of your favorite recipes. Just substitute your preserved lemons for the fresh lemon in your favorite recipe and reduce or omit the salt.
Now that it is once again citrus season, I hope you will take full advantage of the good buys and preserve some lemons to last you for a while.
