The ingredients here sound really odd, but trust me, you should try this at least once. I’ve made this salad for several banquets and church potlucks. The positive feedback is about 50-50 and those that like it really rave it about.
Ingredients:
1 C (240 ml) Lentil sprouts
½ C (120 ml) chopped parsley
½ C (120 ml) red onion – diced
1 tomato – diced
Dressing:
¼ C (120 ml) mayonnaise
2 Tbsp ketchup
2 Tbs olive oil
¼ tsp dill weed
½ – 1 Tbsp curry powder
salt and pepper to taste

Mix mayonnaise, ketchup, olive oil, dill and curry together to make a dressing. Mix all the other ingredients together with dressing, except the tomato. Sprinkle diced tomato on top and serve. Serves 6.
