This contrasting flavors and textures of this salad are a great surprise. Your family will ask for seconds. The color of red onion will stand out but you may prefer the flavor of sweet onion.
Fennel is so easy to grow. You’ll want to have some all summer long to use in recipes like this. So, since it is a cool-weather crop, you can plant it first thing in the spring and plant a few seeds every 2-3 week later and you can continue to harvest after the first few frosts.
1 large fennel, thinly sliced, about 3 C
1 medium onion, thinly sliced, about 1 C
1 large orange, peeled and cut into cubes, about 1 C
¾ C kalamata olives, sliced
¼ C fennel fronds, chopped
1/3 C lemon juice
2/3 C olive oil
2 Tbsp grated orange rind
½ tsp salt
¼ tsp black pepper
Whisk dressing ingredients together and pour over salad ingredients. Toss until well-coated with dressing. Garnish with fennel fronds.
