Fennel is so easy to grow. You’ll want to have some all summer long to use in recipes like this. So, since it is a cool-weather crop, you can plant it first thing in the spring and plant a few seeds every 2-3 week later and you can continue to harvest after the first few frosts.
Ingredients:
Salad:
1 large fennel, thinly sliced, about 3 C
1 medium onion, thinly sliced, about 1 C
1 large orange, peeled and cut into cubes, about 1 C
¾ C kalamata olives, sliced
¼ C fennel fronds, chopped
Dressing:
1/3 C lemon juice
2/3 C olive oil
2 Tbsp grated orange rind
½ tsp salt
¼ tsp black pepper

Directions:
Whisk dressing ingredients together and pour over salad ingredients. Toss until well-coated with dressing. Garnish with fennel fronds.
