Here’s a great popcorn recipe to make for Christmas time. Orange sweetness, cranberry tartness and almond saltiness all combine to make the perfect holiday treat.
I gave boxes of three kinds of popcorn to our neighbors: Cranberry-Orange, Cinnamon and Cracker Jack. Everyone agreed: the Cranberry Orange was amazing.
Ingredients:
10 C popped popcorn
1 C dried cranberries
1/2 C whole almonds
1/2 C (1 stick) butter
1/2 C packed brown sugar
1/4 C corn syrup
2 Tbsp frozen orange juice concentrate, undiluted
1 tsp orange extract
1/2 tsp baking soda

Directions:
Place popcorn, cranberries and almonds in a large bowl and set aside.
In a medium saucepan heat butter, brown sugar, corn syrup and orange juice concentrate over medium heat until butter is melted. Bring to a boil and boil 2 minutes. Remove from heat. Stir in baking soda. The mixture will foam. Stir a few moments and then add the orange extract and stir.
Pour the syrup over popcorn mixture in bowl and stir. The syrup will harden
quickly and be difficult to get over all the popcorn. Don’t worry! It will all get evenly coated after baking.
Pour all of this into a baking sheet or roasting pan, something with at least 1″ sides. Bake at 300° for 30 minutes, stirring every 8-10 minutes.
As the popcorn cools, stir it a few minutes to break up the large chunks. Store in an airtight container.
