In 2016 my husband’s Type 2 diabetes was out of control. The doctor said he needed to go onto insulin. Today, his A1C is 5.9 and he takes no medication at all. He’s done this by drastically limiting his carbs. Everyone is amazed at how well my husband has done with just diet.
So I am constantly looking for tasty, low-carb recipes. And let me tell you. This one nails it. The feta gives a nice tart contrast to the radish. When we finished off the radishes, I substituted kohlrabi. The kohlrabi is a little sweeter and a nice contrast to the tartness of the feta.
I like to use my fine spiralizer for this. A mandolin set on a fine julienne would also work. But if you don’t have either, a coarse grater will work fine.
Ingredients:
2 C shredded Daikon radish
1 medium carrot, shredded
½ C onion, finely sliced
½ C crumbled feta cheese
Dressing:
1 C mayonnaise
2 Tbsp lemon juice
½ tsp dried dill weed
1 Tbsp Dijon mustard
Salt and pepper to taste
Whisk dressing ingredients together. Pour over salad and mix well.
