You know all those zucchini that you miss and don’t find until they are the size of a three-month old baby? Well, here is the perfect use for them.
Trust me, these gummies are amazingly yummy. If you don’t say anything to your little ones, they will never suspect that they are eating vegetables.
Ingredients:
8 C zucchini, cut into cubes, about 3/4”
1 can frozen juice concentrate
1 C water
Choose whatever juice concentrate you like. Zucchini is like the tofu of the vegetable world. It will absorb any flavor, so any fruit juice flavor will work fine. Except for citrus juice (orange and orange blends) I can’t tell much difference between all the different fruit juice flavors in the end product. Maybe someone with a more discriminating palate can tell the difference but to me they all taste berry-ish.

Directions:
Peel and remove the seeds from the zucchini. Cut the zucchini into cubes about 3/4″ square.
Put zucchini into a sauce pan with juice and water and boil till the cubes take on the color of the juice and are slightly tender.
Drain and place on dehydrating tray. Dehydrate for 10-12 hours, until slightly tacky. Do not over-dry; you want them the consistency of gummies. The zucchini shrinks a lot during the drying process, concentrating all that fruit flavor into a single bite.
Remove from the tray and store in an airtight container.
Really. It’s that easy.
Note: In late summer, some zucchini will cross pollinate with winter squash and the result is a zucchini with a harder skin and crisper, more dense flesh. You can still use these, just cut the cubes a bit smaller (about 1/2”) and it may take a bit more boiling to get the cube tender.
